I've actually never tasted it, but it's a Scandinavian "delicacy" made from air-dried cod or stockfish that has been prepared with lye. Yep, you read that right: lye. For more detail than you could possibly want, including celebratory songs, check out the Wikipedia entry.
Where Scandinavians gather in the US, places like Ballard in Seattle or Poulsbo on the Olympic Peninsula, lutefisk is not at all uncommon. I've heard it's more popular among Norwegian immigrants, for example, than among Norwegians who live in Norway.
All that is advertised EXCEPT lutefish sound inviting. Great choice for theme day!!
